Earnings: £38,000 - £43,000 OTE depending on experience.
Location: Mainly based in London, opportunity to travel to sites in Manchester and Oxford. Opportunity to work from home 1 or 2 days per week.
Working Hours: Full Time, Permanent, 40 hours a week.
Job Overview
The Food & Beverage Cost & Operations Controller at Shoryu Ramen Ltd is a pivotal role responsible for managing inventory, optimizing costs, and enhancing profitability. The position ensures accurate stock levels and proper product storage and handling across all sites, playing a crucial part in maintaining the high standard of authentic Hakata tonkotsu ramen. You will provide operational margin controls and ensure the timely sale of products to avoid waste or overstocking. You will collaborate closely with the Head of Operations and CFO to meet business objectives.
Key Responsibilities
- Monitor and control inventory within company sites, advising on purchase and reduction strategies.
- Drive company GP margin for high operating profit through effective stock management and cost control.
- Forecast supply and demand to prevent overstocking and stockouts.
- Create and run audit procedures to ensure robust stock control and perform regular spot checks.
- Coordinate stock audits and assist with monthly stock-taking preparation and physical counts.
- Advise on site-level purchasing strategies based on audit results and stock trends.
- Liaise with suppliers and oversee product storage, especially for short-dated items.
- Regularly visit sites to review operational control procedures and suggest improvements.
- Cost recipes and accommodate menu changes as requested by the Head of Operations and Executive Chef.
- Upkeep of 3rd Party Aggregators (Deliveroo, Uber Eats, Vita Mojo) contracts and regularly review performance metrics
- Provide month end reports and KPI data to company stakeholders with accuracy and timeliness.
- Maintain accurate and upto date menu recipe cost and theoretical GP margins
- Periodical review of market prices and onboarding new vendors
Candidate Specification
- Comprehensive understanding of supply chain procedures and inventory management software, e.g., Fourth Hospitality.
- Knowledge of Access Group Products and familiarity with third-party aggregators like Deliveroo, Uber Eats, and Vita Mojo.
- Knowledge of restaurant and retail operations, with active participation in inventory audits.
- Excellent organisational, project management, written, and verbal communication skills.
- Highly motivated with proficiency in Excel spreadsheets and Google Workspace Suite.
