Executive Chef – Senior Executive

Kanji is our Executive Chef and ‘Shoryu Ramen Boss’ who was critical in bringing the authentic flavours of Japan to the UK. His skillful and masterful expertise in Japanese food has made Japan Centre, Shoryu and Yokocho what they are today. Being a Hakata native and being brought up on ramen, Kanji is passionate about sharing his hometown’s food to the world.

In his spare time, he loves DIY and cooking Italian favourites like spaghetti and pizza for family and friends. His drink of choice is Japanese of course - shochu - classic and timeless!

Our ramen bosses hail from the energised 24 hour city of Hakata, Fukuoka which also happens to be the birthplace of the tonkotsu ramen we all know and love. Being brought up on the stuff, these masters know the ins and outs of what makes a good and tasty bowl.
